Recipe: Vanilla Custard Sauce

Looking for a little something to elevate a simple dessert to something extra special–vanilla custard sauce is the answer.  This goes great with fresh fruit salad, apple pie, cobblers and any simple dessert that you want a little finishing touch.  I’ve layered cubes of angel food cake, strawberries, blueberries and custard sauce for a quick, simple dessert that’s good enough for company.  Best of all you can cook it in under five minutes in the microwave with ingredients you have on hand…

Vanilla Custard Sauce

  • 3 tablespoons sugar
  • 2 teaspoons cornstarch
  • Dash of salt
  • 1 1/2 cups of milk
  • 3 egg yolks
  • 1 teaspoon vanilla extract

Stir together sugar, cornstarch and salt in a 4 cup glass measuring cup.  Gradually stir in milk.  Microwave on HI uncovered for about 2 1/2 minutes, until slightly thickened, stirring occasionally.  Watch carefully, as you do not want the mixture to boil, or it may curdle.

In a small bowl, beat the egg yolks until blended.  Stirring constantly with a whisk, gradually add 1/4 cup of the milk mixture to the egg yolks, then return egg yolk mixture to the milk mixture.  Microwave uncovered on 50% power for 1 to 1 1/2 minutes, stirring every 30 seconds, or until mixture coats the back of a spoon.  Stir in vanilla.  Cool and refrigerate 6 hours or overnight.  (I don’t necessarily do this, but the flavors blend even more the longer it sits.)

It’s really hard to ruin this recipe–I’ve boiled accidentally, and forgotten to stir every 30 seconds, too.  Usually if that happens, just whisk it, and it will come together fine. Enjoy!
